Ingredients

1 medium head red cabbage raw, shredded

3 carrots raw, shredded

1 small beetroot raw, peeled, shredded

1-2 celery stalks

1-2 cloves garlic raw, minced

Pink himalayan salt to taste

1 teaspoon apple cider vinegar raw unfiltered unpasteurized

½-1 lemon lemon juice

1-2 teaspoons coconut secret coconut aminos (optional)

½ inch of ginger root

Instructions

  1. Cut the celery stalks to small cubes.

  2. Combine the shredded cabbage, carrots, beets and celery in a large bowl.

  3. Mix the lemon juice.

  4. Massage the shredded cabbage, carrots, beets and celery with your hands until they become soft. This releases sugars from the veggies, opens up their flavor and make them easier to digest.

  5. Add the minced garlic, apple cider vinegar and mix.

  6. Grate the ginger, add and mix.

  7. Add the himalayan salt to balance the flavor.

  8. Add coconut aminos (optional) or more salt if needed.
